Buffalo frog legs, blue cheese dip

Wet Dredge (4 portions)

100g Buttermilk
1g Cayenne pepper
1g Paprika
1g Onion powder
1g Garlic powder
1g Salt
30ml Water
2 Egg whites
25g Plain flour
10g Cornflour

  1. Whisk all ingredients together.

Dry Dredge (4 portions)

125g Plain flour
75g Rice flour
75g Cornflour
75g Potato starch
2.5g Cayenne
2.5g Black pepper
5g Onion powder
5g Garlic powder
12g Salt
5g Paprika
7.5g Baking powder

  1. Whisk all ingredients together.

Blue Cheese Dip (4 portions)

125g Blue cheese (bleu de auvergne)
115g Sour cream
60g Mayonnaise
1Tbsp Buttermilk
1/2 Lemon juice
Salt + pepper

  1. Blend all ingredients together.

Buffalo sauce (4 portions)

165g Hot sauce
115g Butter
1Tbsp white wine vinegar
3 Shakes of Worcestershire sauce
Cayenne pepper
1g Garlic powder
Salt

  1. Heat and whisk together.

Crisp Frogs Legs

  1. Put the legs or chicken wings in the dry dredge. Then into the wet dredge, then back into the dry. Toss the legs in the dry dredge and fry in hot oil at 180c until crispy.

  2. Coat with the buffalo sauce and plate up with some celery sticks and blue cheese dip.
