Poulet Basquaise

Poulet Basquaise is a traditional Basque dish featuring chicken with peppers, tomatoes, and Piment d'Espelètte, finished with some white wine and picked basil.

Poulet Basquaise (4 portions)

1 Chicken (whole)
40g Olive oil
15g Garlic
90g Red onion (2 small – diced)
400g Peppers (1 red 1 yellow diced)
X1 Tomato (large)
2tsp Piment d'Espelètte
100ml White wine
400g Tinned tomato
200ml Chicken stock
5g Basil (picked)

  1. Prepare your chicken as the video shows, you want even size pieces, so they cook evenly. Colour in a pan with the olive oil. Once coloured on both sides remove from the pan.

  2. Add your diced red onions, after a few minutes add the diced peppers and cook for another 5 minutes. Add some salt and pepper, paprika and garlic, cook for another 2 minutes.

  3. Add the tomatoes and white wine and reduce until almost gone, add tinned tomatoes and chicken stock and cook out for around 10 minutes. Remove from the heat and add the picked basil and stir through. Top with the coloured chicken and place into the oven at 180C for around 20-30minutes or until the chicken is thoroughly cooked.
