Truffade

A hearty dish of sliced potatoes cooked with cheese, garlic, and lardons. Perfect side dish or a stand alone rich and comforting meal.

Truffade (4 portions)
750g Potatoes (Ratte)
75g Lard
100g Pancetta (ventreche)
250g Tomme
2 Garlic (cloves)
Salt + pepper

  1. Add the lard to a pan and bring to a medium heat. Fry your bacon until crisp and remove.

  2. Peel and slice your potatoes, cook until soft and slightly coloured in the hot lard, add some seasoning and garlic about 10 minutes into cooking.

  3. Once the potato is cooked add your bacon back to the pan, followed by the cheese. Cook until the cheese has melted and the potatoes and cheese have come together as one.
