Pommes sarladaises

Sliced potatoes sautéed with garlic, parsley, and duck fat, resulting in irresistibly crispy and delicious potatoes which are so simple to whip up.

Pommes sardalaises (4 portions)
750g Potatoes (Pink fir)
150g Duck fat
4 Garlic (cloves)
30g Parsley (chopped)
Salt + pepper

  1. Start by peeling the potatoes and cutting into 1.5cm slices.

  2. Heat the duck fat in a pan and bring to a medium heat. Add the potatoes and colour on both sides with some seasoning, once coloured and cooked, add the grated garlic, chopped parsley. Mix well and plate up!
